The publication “The Zambia Modern Energy Cookbook” was launched by MECS partner The Center for Energy, Environment and Engineering Zambia (CEEEZ) in front of a diverse sector audience at a research dissemination workshop held in November 2022. Developed by CEEEZ and food blogger Precious Phiri, the cookbook examines the role which energy-efficient cooking devices can play in Zambia’s clean energy future. The cookbook is part of a series of MECS eCookBooks that seek to highlight the compatibility of modern energy-efficient appliances with local cuisines.
The workshop was graced by Ministry of Energy Acting Director Mr. Mafayo Ziba and FCDO Climate and Environment Officer Ms. Jazmine Banda. The audience, which included participants from the Ministry of Energy, the Regulator, public and private institutions working in renewable energy and clean cooking spaces, academia, and interested members of the public, listened to the presentation of results and conclusions from activities such as the kitchen laboratory tests, cooking diaries, focus group discussions, and consultations with mini grid operators. A demonstration of how to prepare Nshima (corn meal porridge, a staple food in Zambia) in the electric pressure cooker (EPC) was conducted during the workshop. Results presented in the cookbook show that electric cooking with an EPC is the most cost and time efficient method of preparing food, with LPG offering a cleaner option than biomass fuels in the event of load shedding.
